Elderly people and people with disabilities cant always rely on themselves to get things done. People get these dogs trained to do specific tasks on cue for the benefit of that person with that specific disability. Whether that be a blind man getting a dog to lead him on his way, or someone who cant walk having the dog grab him a drink.
