Boulder Valley ICO takes children on free nature outings and wilderness adventures. New volunteers in our program are often challenged to find recipes that are suitable for the backpacking, car camping, and day trips that we offer. That is, they don't know what the kids will likely eat. And they may be especially challenged by the need to navigate around the weight limitations of backpacking and the dietary restrictions of many participants. To help them, we have developed an online cookbook... but it needs more recipes.

So, we're looking for volunteers to help us scout out can't-miss recipes that the kids will love. These may be recipes you've used on your own trips. Or they can be recipes you find on the internet and adapt for the sort of outings we offer.

Many, though not all, of the participants in our program are Latino, so cuisine from Latin America will often work well. But the primary need is for food that's tasty and easy to prepare in the field.
