ORGANIZATION: EDUCATIONAL UPLIFT OF THE CHRISTIAN MINORITIES

The goals for this educational endeavor is to have fun and enjoy working in soil (earth), see the wonderful process of germination, growth, flowering, fruiting, and follow the different plants that grow in the same soil yet can produce such different varieties of food that have different levels of nutrition, and taste. In short the chemistry of carbon fixation into complex bio molecules.
The next phase will be pruning and nurturing by providing sun and water so they can grow to their maximum potential and bring about the fruits. These fruits will be harvested from garden to kitchen; here the students will learn how to blanch, and preserve the foods without the use of preservatives, storage for a future consumption. Importantly healthy ways to cook the various food groups to retain maximum nutrition and taste. Introduction to various natural spices and flavoring by mixing the herbal flora with these vegetable to enhance their palatability.
As a secondary part the students may be allowed to help in the sales; by explaining to the general public the various nutrition values of these strange looking vegetables; and sharing with them about their newly acquired knowledge of growing and cooking them. The different recipes and how the green world is good for the environment and for their health. These experiences will help them to be foot soldiers in the green revolution, and at the same time see the benefits of entrepreneurial skills in action. The practical hands on training goes a lot further than other teaching methods, and here is the challenge to inspire and invigorate our youth toward a different way of not only thinking but being present in the very moment, where one can get valuable sustenance from simple ways of working with mother earth with a feeling of accomplishment, and being proud of it. In summary these learning skills and work ethics are a life changing experience that will go with the participants that no matter where they are they will reflect on the unique experience, and pass it to others. This is where/how our mission is accomplished.

Description

In the last few years we have open the farming operation in Oregon to help local students from clay high school to learn to grow food, or had concerns about healthy/nutritious food. Our emphasis is to do it with a respect for creating a robust and healthy environmental balance.
This farming project is designed for local participants who appreciate the wholesome natural ways to grow vegetables of different kind that are healthy, (not commonly available in the groceries ). Asian gourdes of various kind; kadhu, ridge gourde, smooth gourde, bitter melons (Kerala) etc. Gram, pulses, beans of various color/kind along with various types of leafy greens, herbs, spices and a host of different unique other vegetables and beans. These assortment of produce have unique nutrition value and healthy role to play in our diet. This understanding of growing from seed germination to nourishing the plants with good soil, water and sunlight forms the basis of food production. Nurturing the plants to maintain plant health, preventing bugs from destructing so that they produce optimum fruits. Harvesting, processing or cooking, gives each participant a unique culinary opportunity, such training and life skills cannot be achieved any other way. These are the learning experiences that can be applied in very part of adult life and thereupon to the next generation.
