ORGANIZATION: Hostelling International New York

We are looking for homegrown cooks to volunteer to take part in our pilot cooking program, International Ingredients, which explores the history of a dish while you prepare the dish! HI New York City is the largest nonprofit organization dedicated to youth traveling as a means to create a more respectful and empathetic world by inspiring a deeper understanding of people, places and cultures. With this program your plate will be your passport!

Do you love to prepare salted fish: ackee and saltfish or bacalao? Can you explain the role this dish plays in your culture? Do you remember watching family members prepare one of these dishes growing up?

The International Ingredients program is great if you want to share how you prepare salted cod: ackee and saltfish or bacalao with young New Yorkers and International travelers. We will be examining the way salted fish dishes are prepared around the world, the history behind salted fish, and why this dish became so popular in the Caribbean and or Latin America, and Africa. This course will explore salted fish dishes popularity in Portugal, Puerto Rico, Brazil, Mozambique, and Jamaica (etc.).


Note: Peanuts and Almonds will be present in some of the cooking classes


Volunteers will:

  • Attend a one hour orientation and food preparation session from 5:30pm-6:30pm on Friday, November 17th (flexible).
  • Prepare a 5 minute presentation of their culture as it relates to the dish with Education Coordinator.
  • Go shopping with the Education Coordinator the week of the event for the ingredients needed for the dish (paid for my HI NYC).
  • Commit to participating in the program for the allotted time of 10:00am- 2:30pm on November 18th.
  • Receive volunteer hours that can be applied towards free hostels stays anywhere in our network of over 50 hostels in the USA.
  • Discuss their personal experience preparing the dish growing up as well as in their current home with the participants.
